Blue Tortillas for Diabetics and Dieters
Blue tortillas are healthier than white corn tortillas, especially for diabetics and dieters - according to a new study reported in Chemistry & Industry (the magazine of the Society of Chemical Industry).

Mexican scientists found that blue tortillas - made from blue corn - have less starchlinks and a lower glycaemic index and 20% more protein than the white counterparts - making it suitable for diabetics and dieters.

The blue coloring in this particular corn is due to the presence of anthocyanins, the same health promoting compounds found in purple berries and red wine.
