Mexican scientists found that blue tortillas - made from blue corn - have less starch and a lower glycaemic index and 20% more protein than the white counterparts - making it suitable for diabetics and dieters.
The blue coloring in this particular corn is due to the presence of anthocyanins, the same health promoting compounds found in purple berries and red wine.
